What’s your go-to dish when you’re in the mood for Thai food? Cashew Chicken—otherwise known as Gai Phad Med Ma Muang if you want to get all semantic about it—is definitely one of ours because it’s super colourful, super savoury and the cashews give it that extra bit of crunch that you don’t often get in other stir-fries. This particular recipe was inspired by a version of Cashew Chicken from the Chiang Mai Cookery School, but with a few of our own modifications and twists.

Ingredients
  • 3 tbsp cooking oil
  • 8 cloves garlic minced
  • 300 grams chicken thinly sliced
  • 2 onions sliced
  • 1/2 red pepper (capsicum) chopped into 1-inch pieces
  • 1/2 yellow pepper (capsicum) chopped into 1-inch pieces
  • 2 big red chillies sliced
  • 1/2 cup chicken stock
  • 2 cups fried cashew nuts
  • 6 spring onions sliced
  • 1 tbsp white wine
  • 1 bird's eye chili sliced
Sauce
  • 2 tbsp oyster sauce
  • 1 tbsp soy sauce
  • 1 tbsp fish sauce
  • 1 tbsp gula merah (palm sugar)

Thai Style Cashew Chicken
Instructions
  1. Heat the oil in a large wok over medium heat. Add the garlic and cook until fragrant and just starting to brown.
  2. Add the chicken, onions, red pepper (capsicum) and big red chillies. Stir fry 3 - 4 minutes until the chicken has turned white and is partially cooked through.
  3. Stir in the chicken stock and cook for 1 -2 minutes. Add the sauce ingredients and stir fry for a few minutes.
  4. Stir in the cashews, wine and spring onions and cook for just a minute, then remove from heat. Garnish with sliced bird's eye chillies and sliced green onions and serve.
