  • 3tbsp cooking oil
  • 8cloves garlicminced
  • 300grams chickenthinly sliced
  • 2 onionssliced
  • 1/2 red pepper (capsicum)chopped into 1-inch pieces
  • 1/2 yellow pepper (capsicum)chopped into 1-inch pieces
  • 2 big red chilliessliced
  • 1/2cup chicken stock
  • 2cups fried cashew nuts
  • 6 spring onionssliced
  • 1 tbsp white wine
  • 1 bird’s eye chilisliced
  • 2 tbsp oyster sauce
  • 1 tbsp soy sauce
  • 1 tbsp fish sauce
  • 1 tbsp gula merah (palm sugar)
  1. Heat the oil in a large wok over medium heat. Add the garlic and cook until fragrant and just starting to brown.
  2. Add the chicken, onions, red pepper (capsicum) and big red chillies. Stir fry 3 – 4 minutes until the chicken has turned white and is partially cooked through.
  3. Stir in the chicken stock and cook for 1 -2 minutes. Add the sauce ingredients and stir fry for a few minutes.
  4. Stir in the cashews, wine and spring onions and cook for just a minute, then remove from heat. Garnish with sliced bird’s eye chillies and sliced green onions and serve.
